BS 4401 is a European standard on methods of test for meat and meat products that discusses the determination of starch and glucose contents in meat and meat products to ensure meat and meat products are safe for consumption.
BS 4401-18 is the eighteenth part of the BS 4401 series that specifies an enzymatic method for the determination of water-free starch content and glucose content of all kinds of meat and meat products, including poultry.
The method under BS 4401-18 is suitable for the quantitative determination of starch and glucose contents down to levels of 0,30 % (m/m).
Note: The method under BS 4401-18 is not applicable for chemically modified starches or their derivatives.
