BS EN 12014 is a European standard on foodstuffs that discusses the spectrometric determination of nitrate and nitrite content of meat products to ensure meat products are safe for consumption.
BS EN 12014-3 is the third part of the BS EN 12014 series that specifies a spectrometric method for the determination of nitrate and nitrite content of meat products and has been validated for different meat products with a content of 9 mg/kg to 22 mg/kg nitrite calculated as sodium nitrite and 23 mg/kg to 48 mg/kg nitrate calculated as sodium nitrate.
Note: Experiences have shown that the method is also applicable for total nitrite and nitrate content from 5 mg/kg up to 125 mg/kg calculated as sodium nitrite.
BS EN 12014-3 on the spectrometric determination of nitrate and nitrite content of meat products is useful for:
Nitrate can affect how our blood carries oxygen. Nitrate can turn hemoglobin (the protein in blood that carries oxygen) into methemoglobin. Elevated levels can turn skin to a bluish or grey colour and cause more serious health effects like weakness, excess heart rate, fatigue, and dizziness.
BS EN 12014-3 provides you with guidance on apparatus and equipment, procedure, preparation of the sample solution, preparation of the calibration graphs, measurement of nitrate content, measurement of the total nitrite content after reduction, evaluation, calculation of the sodium nitrite content, precision, test report, etc.
The methods and procedures provided by BS EN 12014-3 assist in improving the quality of meat products and ensuring a reduction in the risk to human health due to consumption of nitrate content.
With obedience and compliance to BS EN 12014-3, you can enhance meat products effectiveness and efficacy and manufacture a standardized high-quality product.
