Given that they are large containers or tanks filled with combustible liquid that requires heating, they present significant fire hazards. In this regard, buildings that house industrial oil cookers must have well-designed water mist systems.
BS EN 14972-16 provides guidance on fire testing requirements including test equipment, industrial oil cooker mock-ups, and steps to conduct the test procedure.
By conducting tests in compliance with BS EN 14972-16 you can determine if the water mist system is capable of extinguishing any auto-ignition temperature (AIT) fire inside the industrial oil cooker mock-up, how soon open flames can be extinguished and if there is sufficient cooling of the oil. Indications on these parameters can be useful for a manufacturer or an installer in a food processing unit, to establish safety and fire protection measures.
