BS 7771 is a British standard that discusses the code of practice for the pasteurization of milk on farms and in small dairies to ensure food safety.
BS 7771 gives recommendations for the process principles, design features and operation of equipment used on individual farms by producer processors and in small dairies for the pasteurization of cows’ milk by means of the holder (batch) and continuous flow (HTST) methods.
Guidance is given on the requirements of UK and EEC legislation for dairies concerning pasteurized milk. Guidance is also given on the hygienic and control measures used in the pasteurization process and packaging operations which are necessary to achieve safety and high quality in pasteurized milk.
Note1: BS 7771 does not cover specific recommendations for the pasteurization of cream, ice cream or flavoured milk.
Note2: Levels of heat treatment in this standard are not necessarily appropriate for cream, ice cream and flavoured milk. Separation of milk for other products should be undertaken before pasteurization.
BS 7771 on code of practice for pasteurization of milk is useful for:
A heat treatment process is applied to a product with the aim of avoiding public health hazards arising from pathogenic microorganisms associated with milk. Pasteurization is a heat treatment process that is intended to result in only minimal chemical, physical and organoleptic changes.
BS 7771 provides you with guidance on the design, location and construction of dairy premises, components and functions of equipment used for milk pasteurization on farms and in small dairies, pre-processing operations (reception, storage) and milk handling before pasteurization, operation of pasteurizing plant, milk packaging, storage and handling, methods and conditions for milk pasteurization plant maintenance and inspection, etc.
The guidance provided by BS 7771 assists you in determining the hygienic condition of the dairy plant, enhancing the safety and quality of the pasteurized milk, and ensuring a reduction in the risk to human health from diseases such as listeriosis, typhoid fever, tuberculosis, diphtheria, Q fever, and brucellosis due to the consumption of unpasteurized milk.
With obedience and compliance to BS 7771, you can enhance pasteurized milk’s effectiveness and efficacy and manufacture a standardized high-quality product.
