ISO 660 specifies three methods for the determination of acidity in animal and vegetable fats and oils. The acidity is expressed preferably as acid value or as acidity calculated conventionally.
ISO 660 applies to refined and crude vegetable or animal fats and oils, soap stock fatty acids, or technical fatty acids. It does not apply to waxes.
Note: The methods described in ISO 660 do not apply to differentiate between mineral acids, free fatty acids, and other organic acids. The acid value, therefore, includes any mineral acids that are present.
ISO 660 on animal and vegetable fats and oils is useful for:
Animal fats are largely used in the production of margarine, shortening, and compound fat. They also enter many processed food products.
ISO 660 provides different procedures and methods to test and determine the amount of acid value present in animal and vegetable fat oils.
ISO 660 provides standard guidelines for preparing samples for testing oil specimens.
In ISO 660, manufacturers are provided with cold solvent methods and calculation techniques that assist in maintaining and standardizing product quality by determining standard values of fatty acid.
